01. The Steady Gaze of a Surgeon

Creation begins with visualization; the ability to isolate specific flavor compounds and imagine their structural synthesis before a single ingredient is touched. This is the prerequisite of the craft: absolute optical and sensory focus.

02. Elemental Destabilization

Chemistry requires the shattering of bonds to form new ones. Raw materials — cardamom, star anise, cacao — are reduced to their atomic flavor compounds through kinetic energy. We destabilize the ingredient to release its volatile oils.

03. Fluid Dynamics

The liquid phase is where spirits meet sweet crystals in perfect harmony. This is the process of infusion and extraction, capturing the “spirit” of the flavor in a suspended state. Viscosity is monitored to ensure the solution creates the perfect mouthfeel.

Made entirely by hand. Precisely tempered shells form the foundation — without correct tempering, the snap, shine, and texture would never materialize. Painted, layered, and sealed in deliberate sequence. Small jewels of edible architecture.

Traditional sculpture is subtractive — chipping away until a form remains. Our medium works in the opposite direction.
