Chocolate as a medium requires rigorous thermal discipline and absolute structural balance. Before a single piece is carved, Håkan Mårtensson calculates the tensile strength, viscosity, and crystallization state of the cacao. Drawing on techniques honed while winning Culinary Olympic gold with the Swedish National Culinary Team, Håkan transforms solid chocolate into fluid, high-detail sculptures for international exhibitions, private collectors, and landmark events.
